It’s easy to throw together in a matter of minutes. It is versatile and is one to grab any time you’re looking to add some spice and flavor to your rabbit dishes.

Dry rubbed rabbit meat
A good dry rub will easily flavor your rabbit meat.

Use on whole rabbit or on rabbit parts and pieces, or you can mix it through into meat chunks.

Below you will find a recipe for a single dry rub, which will cover one whole rabbit. For this recipe, you can use dried or fresh ingredients.

There is also a bulk recipe, but that should be made with all dried ingredients so that it is shelf-stable. That way, you can prep it ahead of time and have it in the pantry for when you need it.

Rabbit Dry Rub Recipe, Single Batch

Dried rub for rabbit meat
If you use all dried ingredients, your rub will be shelf stable.

Ingredients:

  • ⅓ cup brown sugar
  • ¼ cup paprika
  • 3 tablespoons white pepper
  • 4 tablespoons sea salt or kosher salt (non-iodized salt)
  • 1 tablespoon onion powder (or two tablespoons fresh chopped onion)
  • 1 tablespoon garlic powder (or two tablespoons fresh chopped garlic, 4 to 6 chopped cloves)
  • 1 tablespoon dried celery seed

Instructions:

  1. If using fresh garlic and onion, peel and chop. Combine all ingredients. Mix through to combine.
  2. Use right away or store for later use.
  3. If you use any fresh ingredients, the rub needs to be stored in the refrigerator. (It can also be frozen). Dried ingredients are shelf-stable and can be stored in an airtight container or jar.
  4. This recipe will rub one 3 to 5-pound rabbit. For a heavier rub, double the batch.

Bulk Mix Rabbit Dry Rub

Make a big batch ahead and keep this rabbit rub on hand. Great for other meats, too!

This rub is so versatile, it’s worth mixing ahead and keeping it on hand. It only takes a few minutes to prepare.

This makes about 4 cups of dried rub. In addition to rabbit, it can also be used with chicken and pork, as well as beef and other meats.

Ingredients:

  • 1 cup brown sugar
  • ¾ cup paprika
  • ½ cup + 1 tablespoon white pepper
  • ¾ cup sea salt or kosher salt (non-iodized salt)
  • 3 tablespoons onion powder
  • 3 tablespoons garlic powder
  • 3 tablespoons dried celery seed

Instructions:

  1. Combine all ingredients together and mix through.
  2. Because the bulk mix is made with all dried ingredients, it can be stored in an airtight container in the cabinet. The dried bulk rub is shelf-stable.
  3. Though optional, you can put an oxygen absorber packet (food safe!) in with the rub mix. This will keep it fresher and will help to prevent caking in the dry rub.
  4. This rub is best if used in under three months, but it will last six months or longer.

How to Use Rabbit Dry Rub

There are many ways to use rabbit dry rub and the cooked meat:

  • Dry rub roasted rabbit
Dry rubbed rabbit
Rubbed whole rabbit, inside and out.
  • Dry rub rabbit for smoking
Smoking whole rabbit, dry rubbed
Upside down smoking can help hold in more moisture.
  • Slow-cooked pulled rabbit
  • Mixed into ground rabbit for a spicy ground rabbit
Rabbit meat balls
Mix the rub mix into ground rabbit meat for anything from burgers to meatballs.
  • As seasoning for rabbit meat for rabbit tacos or quesadillas
  • Anyway, you like to prepare your rabbit!
Pulled smoked rabbit meat
Freeze extra pulled rabbit and use it for any number of dishes.
