Here is a fast and easy rosemary garlic rub recipe that is excellent for rabbit meat. It’s one of those go-to recipes you’ll want to have on hand.

Rosemary is Rabbit’s Perfect Partner

Truth be told, there is hardly an herb or spice that doesn’t pair perfectly with rabbit. Rabbit meat infuses with flavor very easily. It takes on the taste of herbs and spices in a way that few meats can -- not even chicken, with which rabbit is so frequently compared. 

But one of the best traditional flavorings for rabbit, that really makes rabbit meat shine, is rosemary.

Use as a Seasoning or a Rub

You can use this mix as a full rub, or just use it as a spice to sprinkle.

This rub recipe is a go-to to have on hand for all your rabbit dishes.

It is versatile, too.

Use it as a dry rub, mix it into water as a brine, add vinegar and water to make a marinade, or use it as a seasoning to shake over rabbit meat. Use it for roasts, broths, stews, smoked meats, or in meat for pot pies and casseroles.

Mix a bulk batch by simply multiplying the recipe so you’ll always have it ready and waiting.

Recipe for Fresh Rosemary Garlic Rabbit Rub

Ingredients:

  • 2 tablespoons coarse salt (non-iodized, such as kosher salt or sea salt)
  • 2 tablespoons coarse black pepper
  • ½ cup chopped fresh rosemary
  • 3 tablespoons chopped fresh garlic

Instructions:

  1. Mix all ingredients together
  2. Use immediately or refrigerate until ready to use
  3. To use as a rub, first coat the rabbit meat in olive oil (optional but recommended)

Recipe for Making Rosemary Garlic Rabbit Rub with Dried Ingredients

You only need four ingredients to make this tasty rabbit rub.

Ingredients:

  • 2 tablespoons coarse salt
  • 2 tablespoons coarse black pepper
  • ¼ cup dried rosemary leaves
  • 2 tablespoons dried chopped garlic

Instructions:

  1. Mix all ingredients together
  2. You can use it right away, or store it in an airtight container for future use; a shaker top container* is handy!
  3. To use as a rub, first coat the rabbit meat in olive oil (optional but recommended), then rub the meat all over, inside and out, and on all sides.

*Pro tip: Save the shaker tops from grated Parmesan cheese. These fit regular mouth mason jars perfectly! Good for storage, user-friendly!
